Excerpt from a September 28th, 1966 memo titled "Revised October Build Schedule."
Looking back, we can plot a map of where the Parchment trim cars were sold new. This clearly does not demonstrate a a high demand by dealers in the South and Southwest.
The official color name is Parchment; it is not a pure white. Only 257 (~8%) of the 3,225 '67 Shelby GT cars received Parchment (5U) trim. None of the 'very early' cars with Eye-Level Brake and Turn Signal Lights (a/k/a/ 'scoop lights') and/or slanted grilles had Parchment trim. Barring one exception, the production date range of Parchment trim cars at Ford's San Jose plant was from December 30, 1966 through March 28, 1967. The one exception is a special-ordered car built on May 17, 1967. No air-conditioned cars had Parchment trim. No bronze, black, or grey painted cars had Parchment trim. Only one Candyapple Red GT with Parchment trim was built. 67412F9A01020 is a GT 500 automatic and served as a company car assigned to Al Dowd. Only one Acapulco Blue with Parchment trim car was built on May 17, 1967. 67200F0U02614 was sold new to Fuller Ford in Cincinnati, OH. The original owner is unknown and we're not sure this beauty still exists. Only two Parchment trimmed cars were completed late enough by SAI that they should have their high-beams placed in the 'outboard' position. Parchment trim was not originally intended to be offered on Wimbledon White cars (according to the pre-production bi-fold sales brochure).
